Pancakes

Makes 8

Ingredients:
125g plain flour
Pinch of salt
2 eggs
275ml milk
1 tablespoon butter, melted
butter or sunflower oil for frying

  1. Sift flour and salt into large bowl.  Make a well in the centre.
  2. Lightly beat the eggs and pour into centre of the well
  3. Gradually whisk in the milk to form a smooth batter. 
  4. Add the melted butter when you are ready to cook the pancakes
  5. Heat frying pan until very hot.  Add a little oil and wipe out with kitchen paper
  6. Pour enough batter into the pan to coat the base and cook for approx 30 seconds.  Turn over and cook other side.
